What is more comforting during the holidays than delicious food shared with the ones you love? I know we might not be able to spend Christmas with all the one’s we love this year but you will love my not so traditional Christmas menu. I’ve created a Christmas menu for a very 2020 Christmas filled with appetizers, main courses and everything else! If you need me I’m available and will bring my favorite holiday wine Coppola! Stay tuned for favorite Coppola holiday cocktails and recipes!
First I’m going to start with our Seven Fishes Menu. I am not Italian but my friends from Souther Italy have helped me fall in love with this Christmas Eve tradition! I’ll be making these dishes on a smaller scale this year, but not on flavor. I’ve linked some of my favorite recipes for each dish if you need a refresher!
Mignonette Sauce | Clams Casino | Bouilabaisse |Insalata di Mare | Clam Sauce | Stuffed Calamari | Roasted Salmon |Asparagus & Roasted Potatoes | Ricotta Cheesecake
Before we talk our Christmas Surf and Turf Menu, we need to take a minute to discuss Racelettes! We have made friend from Germany, France, Quebec and lots of other wonderful lands which has lead us to really great food experiences. One of the most amazing parties we’ve been to with our friends from far away lands was a Racelette party. There are different kinds or Racelettes, round one, square one, etc, but what I like the most is the one you can purchase here, which has a granite cooktop, 8 wood spatulas and non-stick raclette dishes. Once you choose the Racelette the rest is easy! My favorite cheeses are Racelette cheese (you can purchase the perfectly squared pieces at Trader Joes) Havarit, Gruyere, Cheddar, and Gouda. Then you just grab crusty bread, cold cuts, and a few vegetables and that’s it! Everyone cooks to their liking and has a great time while doing it. Ok onto the menu!
Surf & Turf | Roasted Brussel Sprouts w/ pancetta & panko | Mashed Potatoes | Pecan Pie
I cannot wait to share more recipes and holiday ideas with you! I hope you and your family are staying safe and well during this stressful holiday season. If you need any other recipe therapy let me know in the comments below.
xx
