It must be the signs of spring all around us, but I have been craving colorful and healthy recipes recently! These simple and satisfying cabbage wraps are so good and can be enjoyed vegan or with a little protein.
It is completely up to you whether you want to blanch or eat these cabbage wraps raw. As a personal preference I like to blanch them but I have had them raw and they’re just as good. I know this is not a popular opinion but I am not a fan of lettuce. But cabbage wraps have a nice crunch and are plenty filling!
INGREDIENTS
Red Cabbage
Sliced carrots
Chopped spinach
Leftover cooked chicken
Franks Red Hot
Avocado
Cilantro
STEPS
- If blanching your cabbage leaves, boil a large pot of water. You can skip this step and eat them raw.
- Carefully tear your cabbage leaves away from the head of cabbage trying to keep them as whole as possible. Wash, set aside
- Cut your chicken up and mix in frank’s red hot sauce (to your liking) and stir.
- Slice your carrots, avocado, spinach, and cilantro. Set aside in separate bowls.
- Blanch your cabbage leaves in the boiling water for just a couple minutes, then add to your bowl of ice water, drain and dry with a paper towel.
- Fill each cabbage leaf with your veggies, chicken, and sprinkle my homemade ranch or any dressing you desire and enjoy!
VEGAN or PLANT BASED
