Grilled Mexican chicken kabobs 🌽 🥑
2 inch pieces of cut chicken pieces
2 inch pieces of corn on the cob
Sliced red onion
Halved jalapeños
@traderjoes Elote Seasoning blend
2 tbs of olive oil
Salt and pepper
Melted butter
Combine oil and elote seasoning and marinate the chicken for 30 mins.
Soak skewers for 30 mins (try broth or beer for extra flavor)
Thread corn, jalapeño, chicken, red onion alternatively.
*If your husks are too hard for bamboo skewers use a corkscrew to make a path*
Brush corn with butter and season with salt and pepper.
Grill kabobs for 10 mins on medium heat.
Top with cotija, serve along side with my spicy cheese crisps, rice, and grilled avocado salad (recipes to follow) and enjoy!
