I love bruschetta. It’s simple, fresh, and with the right bread it’s down right addicting. So I wanted to create a simple summer dish around my favorite appetizer. I give to you my Bruschetta, Balsamic Grilled Chicken, and Garlic Naan Bread family style dish. I call it a dish because you literally serve it on one dish and the whole family digs in (utensils not require).
CAPRESE
- 1/2 cup extra virgin olive oil
- 2 cloves of minced fresh garlic
- 26 oz. cherry tomatoes, diced (about 7-8)
- 1 whole mozzarella ripped into pieces
- 1 tsp kosher salt, then more to taste
- 1/4 cup chopped basil ribbons (chiffonade)
Mix all ingredients in a sealable container. Cover for at least 2 hours to let the flavors mix.
CHICKEN
- 4 boneless skinless chicken breasts
- 1/3 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 6 garlic cloves, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Whisk together the olive oil, balsamic vinegar, garlic, salt and pepper.
- Place chicken in a Ziploc bag, and pour the marinade mixture over top. Close the bag tightly and squish it around to coat the breasts with marinade. Put it in the refrigerator to marinate for at least 4 hours.
- Grill over medium-high heat for 8-10 minutes per side, until no longer pink inside or until the internal temperature reads 160 degrees.
GARLIC NAAN
I use Half-Baked Harvest recipe for the most delicious garlic Naan Bread but you can also purchase pre-made Naan from Trader Joes.
Once all ingredients are cooked, salt and peppered to your liking it’s time to serve! I find that it’s best to put it all on one serving platter and let everyone just dig in, family style! I cut the chicken into smaller pieces for the kids to grab but this is a great meal for those very hot summer days that you just want to keep the heat outdoors!
