While in the Hamptons I grilled as much as possible on our Spark Grill! One recipe that I couldn’t wait to make was my version of Grilled Clams Casino! We typically make clams casino with bread crumbs but decided to skip it to so they didn’t overpower the clam. They are so delicious and the Sparks Grill made it so easy to make!! We will definitely be making these every summer.
Ingredients
- Little Neck Clams
- .5 tea sppon of Red Pepper flakes
- 4 cloves of chopped garlic
- Cooked chopped bacon
- Olive oil
- Chopped parsley
- Salt + Pepper
- Arugula and sliced cheery tomatoes (for presentation)
Steps
Heat your Sparks Grill to high heat.
Scrub and rinse the clams. Keep refrigerated until ready to use.
Place a medium saute pan over medium-high heat, add olive oil the garlic, and red pepper flakes and cook until the garlic is brown (not burnt). Remove from the heat, stir in the olive oil, parsley, and bacon season with just a little salt and pepper. Set aside.
Set up the littleneck clams directly on the grill. Cook the clams without turning them. As soon as the clams pop open, after 8 minutes, transfer them carefully with tongs to a platter. Spoon garlic bacon sauce over each clam. Add arugula and tomatoes, top with olive oil and remaining sauce, serve immediately and enjoy!
