With a little help from Trader Joe’s, this Mexican Street Corn Pasta Salad is the best pasta salad for all your summer fiestas!
Since the Mexican Roasted Corn package comes with so much flavor, you’re gonna love it! It’s creamy with just a hint of spice. Mixed with pasta and those great veggies, it’ll be a hit at your next BBQ. I also just posted this recipe on my Instagram page as an entry to win the Trader Joe’s #TJsCornContest wish me luck!
Here’s what you’ll need to make the pasta salad:
1 lb of penne pasta
1 package of Trader Joe’s Mexican Roasted Corn (it includes the Cojita cheese that you’ll add before serving)
1 bag of arugula
1 chopped red bell pepper
1 chopped green onion
1 chopped shallot
bunch of cilantro chopped
1/2 cup of Mayo or sour cream
Salt and pepper
Instructions
Cook the penne according to the package.
While that pasta is cooking place one bag of arugula, chopped red pepper, chopped green onion, chopped shallot, and cilantro all in a large bowl and cover. This allows the flavors to really get to know one another while we work on the rest of the ingredients.
Cook the Trader Joe’s Mexican Street Corn according to the package and reserve the cheese.
Drain the pasta and pour it into the serving platter. Add the corn mixture on top of the pasta. Let it come to room temperature. Once it is cooled, add the mayo and mix really well. Add salt and pepper (a nice coating).
Top with salad mix again and just before serving add the cheese. Enjoy!
