I rarely leave Trader Joe’s without a bag of CRUCIFEROUS CRUNCH POWER SALAD! It’s filled with fiber-filled veggies and makes for a steller side salad or main dish. I’m sharing my farro salad recipe that goes perfectly with this mix, and don’t worry if you don’t have a Trader Joe’s near you, it’s easy enough to make at home.
Ingredients
Trader Joe’s Cruciferous Crunch Power Salad (finely chopped broccoli stems, brussels sprouts, red cabbage, green cabbage, and kale)
2 cups of cooked farro in broth
1/2 chopped red onion
Cotija or feta cheese
Dressing:
- 1/4 cup fresh lemon juice
- 1 small garlic clove, grated
- 1 teaspoon Dijon mustard
- Salt and pepper
- 1/4 to 1/3 cup extra-virgin olive oil
Combine all ingredients in a jar with a tight-fitting lid and shake to combine.
Mix the salad and farrow together in a large bowl. Add the dressing and message, cover, and refrigerate for at least 2 hours. Before serving top with cheese and enjoy!
This makes a great salad for your vegetarian Thanksgiving guests! Everyone will be going back for seconds. Since this salad has such hearty greens, they make for great leftovers.
